How often do you look in your fridge/life/work/relationships and think…”I got nothing”?
I challenge you to get creative. When you really look there is something there. You might have to piece it together. You might have to make something out of what seems like nothing. You might have to get grateful for what IS available to you.
Time for dinner on Monday night and -in the fridge- I got nothing.
When I get creative I have a few carrots, a sweet potato, an onion, one head of broccoli, and a piece of salmon.
Yep. I have supper.
Cut and toss the veggies with a little olive oil (truffle from Vinaigrette one of my favs), salt, pepper, and Sunny Paris seasoning from Penzey’s.
Bake at 375 degrees for 30 minutes. Pop the salmon in the oven for 10 minutes after that (I like it mid-rare).
Supper in a pinch.
In a pinch I think you can find something from anything that looks like nothing. What do you think?
