Fresh And Fast Tuscan Chicken Salad

fast fresh tuscan chicken salad recipeChicken salad is one of my favorite things but the standard recipe isn’t the healthiest or most nutritional choice. I really enjoy coming up with new and different chick salad combos and this recent one is one of my new favorites. I am going food blogger style on this with pics and everything. I thought it would be fun.

fast tuscan chicken salad ingredientsYou need a rotissierie chicken. If your husband happens to get to it before you’ve had a chance to make the recipe you might end up with half a chicken instead  like I’ve got in the photo above. I added a can of cooked chicken to this to cover the missing meat but canned chicken just isn’t the same. It’s gotta be fresh for me. I always buy it already prepared from the grocery. You also need two 14 oz cans of medium artichoke hearts, 16 oz jar of roasted red bell pepper, 1 cup of greek style yogurt, 3 tbsp of mayo, and a generous amount of the seasoning ‘tuscan sunset’ from Penzey’s spices.

cats love chicken salad recipeShred your chicken. Don’t look away. Cleo might sneak up and try to snag some chicken. Honestly, I do like doing photos but I almost wish you could have heard this little beggar through the entire time I was shredding the chicken. He wouldn’t stop meowing and cocking his head to the side while looking up at me with sad eyes crying for some chicken pieces. I  I didn’t relent and the moment I went to rinse the artichokes I caught him stealing.

washing artichokesRinse your artichokes under cold water for 2-3 minutes.

chopped roasted peppers Chop your bell peppers. I use the entire jar.

Add peppers and artichokes to a mixing bowl. 
artichokes, chicken, yogurtAdd one cup of greek yogurt and 3 tbsp of mayo to the bowl and combine all ingredients.

  Add 3-4 generous handfuls of Penzeys tuscan sunset and mix it into the bowl. Super fast, healthy, and delish. Ready to eat. Enjoy! Let me know what you think.
