"Healthy" Chocolate Chip Cookies

Cookies aren't healthy but these have ingredients that will let you feel good about indulging. And they taste DELICIOUS!
  • 1-1/2 cups of Sucranat (raw organic sugar)
  • ½ cup of coconut oil
  • 2 eggs
  • 1 tsp grey sea salt
  • 1-1/2 tsp of vanilla
  • 1 tsp baking soda
  • ½ cup amaranth flour
  • 1- ¾ cup whole wheat pastry flour
  • 4 tsp of hot water
  • 1 bag of 60% cocoa chocolate chips
  • ⅓ cup of semi-sweet chocolate chips
  1. preheat oven to 375 degrees
  2. In a large mixing bowl add sucranut and coconut oil and blend
  3. Add to bowl eggs, salt, and vanilla and mix
  4. Add to bowl amaranth flour, pastry flour, water, baking soda, and chocolate chips, mix together.
  5. Roll dough into balls (as big as you want the cookies to be) and place on greased cookie sheet.
  6. Cook for 10-12 minutes making sure cookies are slightly under cooked so they stay soft.
  7. Enjoy! (in moderation of course)
